Sweet Shortcuts - Sprite Cupcakes

I was chatting with a friend of mine who loves to bake, and she told me about something called Sprite Cupcakes.  She said that all you do is take a vanilla cake mix and add a 12 oz. can (or 1.5 cups) of Sprite, or any other lemon-lime soda. 

I was very skeptical...don't cake mixes need eggs and either oil or butter?

I decided to throw caution to the wind and try it.  Guess what?  It was DELICIOUS!



I don't have any in-process photos, because you just add the soda, mix in and pour the batter into lined cupcake pans.  Bake at 350 for 18 - 20 minutes.

The cupcakes were light and fluffy, with a yummy citrus flavor.  I frosted them with vanilla frosting, but I bet strawberry frosting would be good, too.  You can also use diet soda if you'd like.

Honestly, it doesn't get any easier than that!!  For those of you who think they can't bake - you've got to try this!

P.S. The cupcake liners are made by Reynolds (as in aluminum foil) and are silver on the inside.  I found these at my grocery store.
