Apple Spice Cupcakes with Cinnamon Frosting

I think I'm in the minority when it comes to spice cakes - I love the flavors of cinnamon, nutmeg, ginger, allspice and coriander together in a cake.  Yummmm.  But when I asked my friends, everyone said that it was okay, but not their favorite.  Well, maybe this version will bring people over to my side!

I saw this recipe on the side of a box of spice cake mix, and I knew I had to try it.  Adding apple pie filling is genius, because it makes the cupcakes incredibly moist and delicious...and the cinnamon frosting is crazy good!



Ingredients:

1 package Spice Cake mix
3 eggs
1/3 cup vegetable oil
3/4 cup water
1 21 oz. can of apple pie filling (I used the Comstock More Fruit can)
1 cup chopped nuts, if desired

Directions:

Preheat your oven to 350 degrees, and line your cupcake tins with your favorite liners.

Using either a stand mixer or a hand mixer, combine the cake mix, water, eggs and oil.  Beat at medium speed for two minutes.

The next part depends on personal preference - I put my apple pie filling in the food processor, because I didn't want any big chunks.  If you like big chunks, simply chop up the fruit until you get the size you want.



Add the apple pie filling to the batter, and stir in manually.  You can add chopped nuts now, if you want.

Pour the batter into your liners.  [You can be a bit generous, because I found out that the cupcakes sink as they cool.]

Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.

 


Cinnamon Frosting:

Combine a container of vanilla frosting with 1/2 teaspoon of cinnamon, and mix well.

I piped the frosting on, but you can spread it on however you want.  Look at those little flecks of cinnamon throughout the frosting...oooooh!



That's it - glorious apple spice cupcakes with cinnamon frosting!  The most delicious version of a spice cake that I've ever had, and my friends loved them!!!
