Sweet Shortcuts - Caramel Latte Cookie Pie



You may be thinking, "cookie pie?"  I gave it that name, because this amazing dessert is made with cookie dough, but resembles a pie!

The shortcut here is the use of store-bought sugar cookie dough and jarred caramel sauce, but you won't think it tastes like a shortcut at all...it's one of the most delicious desserts I've had to date.  I know you will be blown away by the caramel-y goodness.




The inspiration for this recipe came from a Chai latte cookie bar recipe that I found on the Smuckers website, but I thought making it with a caramel latte mix sounded better...if you're crazy about Chai, then go for it!

Ingredients:

One tube (16.5 ounce package) of refrigerated sugar cookie dough
One 0.8 ounce packet of instant caramel latte mix (I used one called Nescafe Memento)
Just less than 1/2 cup of caramel sauce
2 tablespoons flour

Directions:

Preheat your oven to 350 degrees.

Place your sugar cookie dough in a bowl and sprinkle the caramel latte mix over it:


Break up the dough in pieces:



Then really get in there (remove your rings first!) and knead the dough until it's well combined:


Put 3/4 of the dough into the bottom of a 8 or 9 inch round cake pan:


Bake this bottom crust for 12 - 17 minutes or until it's golden brown.

In the meantime, mix the caramel sauce and the flour.  This thickens the consistency and makes the final product ooey gooey and chewy.  J

When the bottom crust is done, remove it from your oven and pour the luscious caramel sauce over it.  Spread evenly:

I could just eat it like this!

Take the remaining 1/4 of the dough and drop it in little pieces over the caramel:


Pop it back in your oven for 23-27 minutes, or until it's golden brown and slightly firm in the center:


I had a bit of a caramel lava explosion on the right side of my cookie pie, but don't you worry if this happens to you, it still tastes delicious.

Cool your cookie pie for at least an hour and a half, and then slice in wedges.  I topped my wedges with salted caramel ice cream (yum) and it was mind-blowing!

You can also serve this dessert with hot caramel lattes made with the mix:
