There are only three ingredients - one spice cake mix, one 15 ounce can of pumpkin (not pie filling), and a little milk. That is IT.
Just mix the cake mix and pumpkin by hand, and drizzle in milk little by little until the batter comes together (it should be quite thick). Scoop it into your muffin/cupcake pan and bake it in a 350 degree oven for 15 minutes.
I really hope you try this recipe. The muffins are delicious - so moist and full of spices like ginger, nutmeg and cinnamon that will warm you up on a cold fall day.
These would be great if you're having people over for brunch, school coffees, or to bring to someone special in your life!
These are potentially vegan, depending on what mix you use, because you don't use butter, eggs, etc.!
